Baked garlic chicken breast I made for an early dinner today. Flatten the chicken a bit or cut in half to ensure it gets cooked through. Minced garlic, garlic powder, salt, pepper, and italian breadcrumbs mixed in a bowl, eggwash the chicken, and coat chicken in breadcrumbs. Bake in convection oven (or large oven) 400 degrees for 20 minutes. Had that with steamed mixed vegetables.

Cooked an entire log of ground beef. Made some taco meat in a large slow cooker, and put the meat in ziplock bags in the freezer. Was enough for 6 bags. I take out a bag, thaw it in the fridge overnight or in a bowl of water if I want to eat it the same day, heat it up in a bowl in the microwave, and use it for soft tacos or nachos, or whatever suits your fancy.
Then I made and froze lemon garlic chicken breast in a large baggy that I'll throw in the slow cooker in a bit: Raw chicken breast with the fat blobs cut off, lemon juice, minced garlic cloves (not 'jarlic', CLOVES) all poured into a baggie. Should've blended up the lemon and garlic cloves instead. Oh well.
Trying to get back into freezer meals, mostly because I'm sick of trying to figure out what to cook for the evening.
