Not much anymore, just enough to cover the rice a bit. Appreciate the spanish rice recipe, but I can't do onions and tomatoes. I'd make a list of foods I won't eat, but that'll take a while, so maybe later. The shrimp fried rice seems good, though I don't have any shrimp.
May 30 2021: My brother ordered pizza for him and I last night, but it was a chicken bacon ranch pizza with tomato. He did this on purpose knowing I don't like chunky tomatoes and began b!tching at me about picking the tomatoes off the pizza! Because of his complaint, I only ate one slice and left. I told him the next time he orders chicken bacon ranch pizza, leave me out of it if me picking the tomatoes out is going to be a big deal every time!
June 1st 2021: Grilled turkey and cheese, flaming hot cheetos, Campbells chicken noodle soup, and Nighty-Night tea.
June 2nd 2021: Grilled turkey and cheese, apple slices, and black tea, for lunch.
June 8 2021: Zucchini spirals with meat sauce and cheese for lunch.
June 9 2021: Chaffles, toast, an apple cut into pieces, and coffee for breakfast.
June 12 2021: Green apple with peanut butter, and coffee
June 18 2021: Chicken nuggets and pizza rolls with ranch dressing dip, and coffee
June 27 2021: Spaghetti, meatballs, and homemade garlic bread
June 28 2021: cooking a Cajun turkey breast in the air fryer
July 2 2021: Soft tacos using Instapot slow cooker. Set pot to Saute with a bit of oil, toss in frozen ground beef, toss in seasoning, mash it up with a ground beef masher, pour some water into it, mash it up again, close and lock lid, and slow cook for however long it needs.
July 5 2021: Chili spaghetti
July 11 2021: chicken nuggets and fries dusted with ranch seasoning
July 13: Scrambled egg, andouille sausage, and cheese mix, apple pieces, sweet tea, and coffee for breakfast
July 14: Shrimp ramen noodles and sweet tea.

Chili spaghetti with fresh shredded Asiago cheese was my early dinner.
Edit: Every restaurant I went to so far, all their sweet teas tasted terrible. They weren't strong and sweet enough for me. I brewed sweet tea the other day and it tastes better than theirs do!
Edit Aug 3 2021: Garlic parmesan and ghost pepper boneless wings from Wingstop

Going to be pan frying a chicken breast rubbed with chipotle seasoning and lime juice, and steamed vegetable mix for dinner: carrots, broccoli, and cauliflower. I'm trying to go light on my dinners for a while.

That's what I need to start doing, especially since I have the habit of eating supper when it gets dark!
I'll be cooking some clam chowder in my instapot, but I'm waiting for it to clean first. White vinegar, lemon juice, and water, and set the timer for 30 minutes. It SHOULD work, as I've done that once before after cooking spaghetti in it. I did last night, too, thus the need to clean it up, as hot soapy water didn't work.
Also, and I know this isn't food related, but a mixture of bleach, white vinegar, concentrated lemon juice, water, and baking soda, in a spray bottle, makes a good cleaner for the kitchen and bathroom! I just used it on my stove and it works wonderfully!! Stove, countertops, floors, sinks, tub or shower/walls, and toilet, is my recommended use, but you could use it on anything white. Just remember it has BLEACH in it!! Spray it on a gas stove if you have burnt stuff on it, and let it sit as long as possible, then scrub and wipe away!

I would think that combination would be too harsh for certain appliances. I will give it a try with our stove, though. We have an electric coil stove, and it tends to be a b*tch to clean as much as a gas range.
What about the inside of an oven? Can it be used for that?

I have no idea, but I'll try that eventually.
This just in: I DO NOT RECOMMEND HEATING UP CREAM-BASED FOOD IN THE INSTAPOT! It will scorch the bottom of the pot! I'll have to repeat the vinegar method and clean it out now.

A double broiler would probably be your best bet with reheating creamed soups, or try a different setting on it. Isn't there a 'keep warm' feature, or a 'slow cooker' feature on those things?

Yes, but that takes a long time, and I was hungry. Edit: stuffed chicken breast that dad cooked. Tasteless piece of sh!t! The spinach part was good, but the chicken was bland! When it comes to chicken breast, RUB your seasoning into the chicken, in my dad's case, it was paprika! Don't sprinkle it on like a pansy! As quoted by GaryTheBBQChef, a Tiktoker I watch: F*CK IT UP WITH THE RUB!! Shake that sh!t onto the chicken and rub it in! Sometimes, it's necessary to make personal adjustments to a written recipe to fit your tastes! Me? I RARELY measure out my ingredients and just eyeball it, especially spice rubs, and believe it or not, it works for me! Edit: snacking on 3D Doritos. Yes, they came back, and NO, they are NOT the 3D Doritos I remember! I remember them being bigger and puffier...but of course, what else would I expect? These current ones are just a puffier version of Bugles, which I'm not a fan of! Apparently, people on Facebook even agree to this! Edit 8-19: And what's the idea of people telling others what 'the best part' of food is?! Example, when I cut the skin off of a piece of salmon, mom or whoever would go 'The skin is the best part of the salmon!' OK, then you can have the skin and I'll take the meat! If that's to make us feel guilty about food 'waste', then you'd best try harder! Edit 8-21: Nasty ass chicken Alfredo from dad. I'll be making dinner of my own tonight to counter it: spice rubbed chicken and steamed broccoli. Edit 8-22: Buffalo chicken wrap and rice from Cheddar's Scratch Kitchen

Thanks for the recipe and the website!
The company that discontinued Aunt Jemima's logo will officially NOT be getting anymore of my money because I can no longer find boxes and bottles with her face on it! That's what they get for listening to the woke! I'll be turning to another company for pancake batter and syrup. I tried to scratch make it the other morning, and it turned out tough and hard to eat. Guess I overmixed it. Anyway, I had spaghetti and meatballs, and homemade garlic toast, for dinner tonight.
Edit 9-6: sh!tty chicken thigh from dad. I got chicken breasts in the sink, so I'll make another dinner tonight. Geeze, everything I've had that he cooked the past month turned out to be tasteless crap! He said he was cutting down on salt intake, and as a result, barely seasons his food anymore. AND I KNOW IT'S THE LACK OF SEASONING BECAUSE I COOKED A FROZEN PIZZA IN MY CONVECTION OVEN AND IT TASTED BETTER!

Seasoning is a make or break thing with food. Too much and it overpowers the dish, and too little and it makes the dish bland. I don't usually use instructions on how much to include myself, I just trust my judgement, and personally, I say that's the best thing to do, as you learn more from experience. Just be sure and taste as you go. And while we're on the topic of seasoning, does anyone know what to do with Mediterranean seasoning? All the sites I've visited just give me details on how to make the stuff, but not how to use it. I know it's good on chicken and fish, but what about other dishes?

I went to Logan's Road House yesterday myself. They don't serve peanuts anymore! I guess that's another fun thing they decided to get rid of, either due to the ongoing situations, or someone b!tched about them because 'allergies', or new employees complained about 'shells on the floor' and sh!t... Of course... While I understand allergies is serious, it's easier to NOT GO TO A RESTAURANT WHERE BARRELS OF PEANUTS ARE A THING, RATHER THAN RUIN IT FOR THE REST OF US!!
Anyway, I had a burger, fries, and Dr Pepper there. Wanted a soda after many months without one, but now I'm back to strictly tea, juice, and water. A large pumpkin was one of the things I bought yesterday, and I actually bought it to cook with, not to carve. I don't have any ingredients for my usual soup with it, so does anyone have recipe ideas for pumpkin, I mean aside from the usual, like pumpkin pie and bread? I also plan to roast the seeds, too. And finally, I've officially boycotted Uncle Ben as of yesterday, because the companies caved in and got rid of his icon and name from the boxes. I couldn't find the original box anywhere! Oh well, I got empty boxes for preservation of history. Besides, Rice-A-Roni is cheaper and tastes way better anyway.

Chili spaghetti for breakfast and lunch, and green tea today. I don't have any breakfast foods, so whatever.
How hard is it to make coleslaw anymore? Twice in one week, I had coleslaw from two different places: one was at Logan's Roadhouse, and last night for dinner was Golden Chick, and both times their slaw was dry as f*ck. I had chicken strips, a roll, mac and cheese, dirty rice, and coleslaw; barely any mayo and vinegar as I thought it was suppose to have... If not dry, then too sweet for my taste! Even their rice sucked!
By far, KFC's coleslaw is the best I've ever had, so I hope their recipe never changes.

I don't know, I've never attempted to make slaw dressing. We buy the premade stuff at Wal-Mart and mix it into coleslaw, then slather it onto hamburgers and brats. We had slow cooker potroast with carrots, potatoes, and onions, for dinner tonight, though, but it was a little on the salty side.

My food choices have been sporadic... but mainly because I've fought with the keto diet trying to lose weight, and ended up getting on another diet which was working better, but I kinda eased out of it. That being said, thought I'd share an easy recipe I'm most proud of: Garlic Chicken Sandwiches You're gonna need: - A loaf of garlic bread (I prefer ones that have salty garlic butter in them)
- Popcorn chicken (breaded chicken strips work good too)
- Applewood smoked bacon
- Muenster cheese (shredded)
Preheat the oven for 400 degrees, and while the chicken is cooking in it (About 20-25 minutes), go ahead and cook the bacon (I generally cook the whole pack in case I want leftover strips as a snack later). Once the chicken is done, go ahead and cook the garlic loaf for a fraction of the time, but on the same heat (I usually do it until the butter has all melted into the bread, but sometimes I've let the buttered part crisp up as well. Either way, DO NOT COOK IT FOR SUPER LONG).Once you've done all that, take the bread out, and assemble the sandwich, topping it with the muenster cheese. I usually leave the top bread slice off so that I can put it back in the oven to let the cheese melt and warm up the rest of the ingredients. And that's pretty much it One thing I'm thinking of doing to improve it the next time I try to make it is to get some Wing Street Parmesan garlic sauce to coat the popcorn chicken with.

The Keto diet does work, but I can't commit to it! I lost maybe 5 pounds when I first started, then I fell off. Once I start dieting, I eat nothing but the diet food I have, and then once I run out, I eat whatever else I have, killing the diet entirely. I have a few keto and low-fat cookbooks, but I don't use them often, and I need to. I mostly eat spaghetti and WolfBrand chili, and I know that's a total f*ck no when it comes to losing weight.
I really do NEED to jump back on it though. My stomach size has gotten worse, and my energy's complete sh!t.
I eat a lot of chicken and I LOVE garlic, so I've GOT to try that sandwich recipe! Not tonight though, I'll be cooking chicken cabbage cassoral. I was going to have it last week, but I accidentally left the chicken thawing in the sink overnight and didn't want to risk it. Food poisoning is NO JOKE! Take it from someone who's cooked week old fridge thawed chicken breast because she didn't want to let it go to waste! It f*cking hurts!

I agree that the keto diet does work, but I can't commit to it either. That's my major problem with it: it's so strict.
The diet I'm on now was working pretty well until I got too lax with it. Basically I was cutting down heavily on carbs and sugar, but every once and a while I'd have a can of pringles or something as a little treat. The goal being to have more healthier food days than unhealthy ones. Of course I had a little slip up. Once my snap comes in I'm gonna get back on it and be a little more strict with than I was before.
Yeah, food poisoning sucks. My mom almost died because of it when I was really young.

Yeah. There's also not much Keto recipes I'm into, either, except a couple recipes from one of my books.
Sugar, I have a hard time cutting out. I still enjoy ice cream and honey, but I've completely replaced sugar with splenda, so that's something. I've cut out soda completely after a tooth removal, which I've said in another thread, and went strictly with coffee, tea, and water ever since. Didn't do much for my weight because again, I can't commit to a diet, and I have a habit of eating late, as well as snacking on sweet stuff, and eating pasta and chili like no other... I can't give up Wolf Brand Chili. I just can't...but I AM learning to cut the cans in half, so...
Commitment for anything is a problem with me now days, especially when it comes to diets. I was suppose to be on the Keto diet for a while, and I had cookbooks and Keto diet pills to help me. Well, after I ran out of healthy food and realized how expensive health foods were, I jumped off and gained my weight back. I even have an exercise bike, but no motivation to use it every single day.
Anyway, I think I'll cook the cassoral tonight but save it for tomorrow. I've really been trying not to eat dinner so late anymore.

Yeah, I hear you on the pasta... one of my favorite meals was getting elbow macaroni, mixing in some butter, nature's seasonings, and then add some chopped cooked sausage or hot links. Best hot links to get are Earl Campbell's hot links (They're great on the grill too)
Committing to a diet is hard, yeah. That's why I think it's easier to just cut down on certain things. Like, still have them, but just less. One thing that really helps with cutting down on bread is "Franz Keto Bread". It's a much healthier alternative, and still tastes like white bread. It still has some carbs in it, though, so you gotta be careful with that.
Another thing that supposedly helps with weight loss is Sriracha, and other chili pepper based sauces (If you don't mind spice). I used that a lot whenever I made grilled cheese sandwiches, or when I cooked some meat and cheese in a skillet. Also, if you really like garlic and don't mind spice, the same company that makes sriracha makes a garlic chili sauce that is b*tchin' when you put it in a hot sandwich, grilled cheese or not.
As far as dieting goes, I just went and ate like I did when I was on keto. Instead of aiming for ketosis, though (which is where a lot of the pressure came from that made me give up on it). Lots of meat, cheese, and that's really about it.

Well, I was going to try that chicken sandwich recipe last night, but I realized I don't have garlic bread, and I was too lazy to do any heavy duty cooking...so I made a bbq chicken sandwich using airfried chicken nuggets, toasted keto bread, and bbq sauce for lunch. Wasn't that good, but still edible. I had garlic and olive oil pastaroni and salmon mixed into it, and a glass of chocolate milk, for dinner. I think I'm starting to get to the point where my stomach can't handle chocolate milk and junk food, like Doritos. Doritos and Cottage cheese were a snack staple of mine since I was 7, so trying to give those up would be hard! I bought oroweat keto bread, even though I don't like the texture very much. And you are talking to the right person on spicy food!! I have a bag of cayenne pepper I grew this summer, in the freezer, but don't know what to do with them yet. It'll take more than what I have to turn them into a powder and put it in a jar, and I don't know how to make sauces. Last time I tried with habanero, it was just a mesh of pepper pulp, so I dehydrated the rest, too... I'm gonna wait until I grow more ghost and reaper peppers before I use the ones I picked. And yeah, I can't ever commit to a diet. I eat all the healthy stuff I have, then after I run out, I eat whatever food I have let, ultimately killing the diet attempt, so I kinda go on and off on dieting. Edit 11-29-2021: Tuna helper and steamed broccoli for dinner. I also have garlic bread, so if I remember, I'll make that chicken sandwich sometime this week! Edit 12-6-2021: Nevermind, I forgot all about doing that. I had garlic lemon chicken breast with garlic bread instead. Edit 12-8-2021: Chicken breast with asparagus for lunch today Edit 12-23-2021: Made onigiri earlier using leftover salmon from dinner the other day. Will be having tacos for dinner. Edit 12-28-2021: Homemade english muffin and coffee Edit 1-17-2022: Breakfast sandwiches using English muffins, scrambled egg with salt, pepper, chili and cayenne powder mixed in, spicy habanero shredded cheese, deli turkey slices, and cayenne sauce. And some coffee. Dinner is spaghetti and meatballs! Edit 3-23-2022: Paprika coated chicken breast and broccoli for lunch Edit 4-10-2022: I just cooked and ate a piece of meat with fanmade 'Goron Spice' rub I saw on Youtube. I wasn't impressed. It made the meat taste exactly like the kind of marinade Chinese restaurants put on their teriyaki chicken skewers, which is probably what it is. I'll experiment with my own creation of 'Goron Spice' one day.

Alright, so, this will sort of be two recipes in one post. They will both be separated. The first one up is the recipe for the seasoning I used, of which we use a lot at my house. It's a seasoning I made on a whim one day that actually goes good on just about everything, especially beef. {IF THE SEASONING DOESN'T MATTER TO YOU, JUST USE SEA SALT AND IGNORE THIS RECIPE UNTIL YOU SEE ANOTHER MESSAGE LIKE THIS ONE BELOW}Ingredients: Sea salt, garlic powder, cayenne powder, ground black pepper, & cumin If you have a spice grinder, use that. If you don't have one, use a blender instead. Take the following and put in your grinder of choice: 4 tablesp00ns of sea salt, 3-4 tablesp00ns of garlic powder, 1-2 tablesp00ns of black pepper (really ease on the side of caution with the amount of black pepper you put in), 1 teasp00n of cumin powder, and 1 teasp00n of cayenne powder. Grind it (put on highest process setting and tilt the machine carefully to ensure it all gets mixed together properly if using a blender). And that's pretty much it. The amount this will give you may be enough for the following recipe, but I repeat the process a few times so that I'll have a lot of it in one empty seasoning canister for later. {VV END OF SEASONING, FOOD RECIPE BELOW VV}
BEFORE WE CONTINUE, A BRIEF WARNING: You will need a cast iron skillet for this. This doesn't have an exact name atm, so I'm just going to call this "Meat Poutine." I'm not too sure on the price of the ingredients, but aside from the seasoning, the ingredients are as follows: pork belly (slab size may vary), shredded cheese (I went with marble cheese), and heavy whipping cream. - Take your pork belly and cut into several bite sized cubes. Coat the skillet with olive oil and cook the pork belly until it gets crisp (I usually cook it on level 6 on the stove/one level past "medium" while stirring the meat around to make sure all sides get crispy). Save the juice and put it in a bowl to the side. KEEP THE MEAT JUICE, WE'LL NEED IT LATER!!
- When the pork belly starts getting crispy ends, and once you've put the juice in a bowl, start putting the seasoning on the pork belly (or season them before, either way works, just make sure you get the juice in a bowl quickly). I like it really salty, so I put a generous amount of seasoning over the pork belly.
- Once they're nice and crispy on all sides, take the pork belly out and put it off to the side (I usually put them on a paper towel over a plate). Pour the meat juice back in the pan, crank the temperature down to medium.
- Get the heavy whipping cream. I don't have exact measurements for this, so you're going to have to eyeball it while erring on the side of caution. Don't put too much, and don't put too little. Put a "decent" amount in there and stir with a whisk. If it looks like gravy after a bit of stirring, GOOD! If there's still a bit of juice left outside of the gravy mix, try to whisk it into the rest, or adding a little more whipping cream.
- Turn off the stove and prepare to assemble. In a bowl, put one layer of pork belly, then cheese, then gravy, and repeat until you're satisfied by the amount.
Annnd that's it for that recipe. Let me know if you guys ever try it!
Also, bonus tip: Depending on the meat juice you have alongside whatever seasonings you threw in with it, will determine the kind of gravy you make with it. Either way, it's very easy to make keto/diet friendly gravy with meat juice and heavy whipping cream. Also, I highly recommend throwing in some cheese shreds to make a cheesy gravy.

I have a cast iron skillet and use it all the time! I love it! I have every ingredient EXCEPT pork belly, so I added it to my shopping list for next time! Man does that sound good! lol!
Paprika chicken and cream sauce. This recipe I got from my keto book, but this is my own variation after experimenting with the spices! -Chicken breasts -Salt -Pepper -Paprika powder -Chili powder -Onion powder -Garlic powder -Any kind of seasoning mixture; I recommend Chipotle and Roasted Garlic This dish is not spicy unless you add your own spices to make it that way!Thaw chicken breasts and cut as much fat off as you can. Some fat will melt onto the skillet in which YOU MUST scoop them out or it'll ruin the sauce later!! Mix chili, onion, garlic, paprika, and your choice of spices, in a bowl. Rub chicken with the spice mixture. Brown chicken breasts on medium heat and remove to paper towel to drain, then move into a large bowl. Shred with two forks. Remove what chicken fat remains from pan. Toss butter in skillet and allow to melt. Scrape the pan of chicken and seasoning with spatula, but DO NOT THROW OUT AND DO NOT DRAIN, as it's needed for the sauce! Slowly whisk in heavy whipping cream, then toss in the paprika, garlic, onion, chili, and whatever powder mixture in the pan; season to taste. Whisk together. The sauce will thicken up due to the spices absorbing the cream, in that case, add in more heavy cream and keep slowly whisking until it becomes a thick red sauce. Add in however much cream and spices you want to taste. Turn heat on LOW! Let simmer and stir with spatula when needed to avoid burning. Carefully toss in shredded chicken and coat in sauce with tongs or spatula. Keep heat on low and allow the sauce and chicken to simmer, while stirring with spatula when needed to avoid burning. Scoop up in a bowl or plate and enjoy! A little warning: the butter and heavy cream will make the dish a little 'greasy'. You can either eat as is, or sop up the grease with paper towels, but I don't recommend doing too much of it, because some of the sauce might go with it, and dry out the dish. This also makes good leftovers and freezes well in containers.
Edit 9-11-23: Breaking my keto diet to make tacos for dinner using my small slow cooker I haven't used in a while. 9-24-23: BBQ Brisket sandwich from Bucees. 10-10-23: Bacon and salmon for breakfast, swai and broccoli for dinner.

Scrambled eggs mixed with canned crab. One of my aunt's cooked this for us this morning when we went for an early morning visit. Melt butter in a skillet. Drain and cook the canned crab in a skillet for a few minutes. In a bowl, crack a couple eggs, add salt and pepper, add cheese if you like, and beat them. Pour over the crab meat, add chopped chives, and stir together until the eggs are set.
I was a little weirded out by it, but it tasted pretty good.

Trying out the scrambled egg crab idea, and you're not kidding, it's pretty good! I'm also having some keto bread, sliced plum, and a yogurt with my breakfast.
Edit: soft tacos tonight.
6-6-2024: Nashville Hot Chicken. Got their standard hot sandwich and fries. Pretty d@mn good, but not doing favors for my stomach right now.
